Delicious dry sausage innovation in the shape of a hand-scooped chocolate bar. For the cuvée we process meat from our Scottish highland cattle, forest hogs, sheep, goats and fallow deer, which all live in the Edible Zoo, into an exquisite salami, whose flavour and shape are simply iconic.
At our zoo, we have many old breeds such as Scottish highland cattle, woolly pigs, Turopolje pigs, Kärntner Brillenschafe (Jezersko–Solcava sheep), Krainer Steinschafe (Bovec sheep), Jacob sheep, Racka sheep, Steirische Scheckenziegen (Styrian spotted goats) and fallow deer, because they are perfectly adapted to free-range husbandry all year round and because we want to conserve the old breeds, or there will only be hybrid XY versions left without alternatives.
