Milk chocolate 40% filled with yellow muscatel white wine ganache and wine raisins
Tement’s Yellow Muskateller is intense in your nose but particularly mild on the palate. The flavour presents as a playful mix of orange blossoms, tangerines, peaches and apples. For this chocolate, we steep some elderberry flowers in the Yellow Muskateller, add orange juice, a dash of Zotter Grappa and some boozy raisins which bathed in this wonderful wine for a while. This creates a delicious filling, which we inject in milk and white chocolates, and then we coat this sublime creation in some sweet milk chocolate with a 40% cacao content.
