A homemade cashew nougat sheet topped with a soft pineapple layer, radiating the pineapple’s juicy-sweet, sunny but tart, fresh character. We make sure the tough cashew fruits are extra cold when we crack them instead of applying the usual frying method, in order to preserve the true flavour. We gently roast the cashews and process them to produce a tender-melting nougat mass, which we then infuse with small pieces of cashew before dunking the whole thing in milk chocolate.
