Free-range mutton bones are browned in olive oil, raw cane sugar and some onions, then deglazed with red wine and reduced before being infused with mutton stock, soy sauce and balsamic vinegar and seasoned to taste with herbs and spices. This will simmer for at least 24 hours until it has a syrupy consistency – a natural mother sauce free from artificial flavours and flavour-enhancing additives.
Method: Briefly heat up but don’t let it come to a boil or reduce. Dilute with water and/or sour cream to taste. Demi-Glace is highly concentrated and rich.
