100% organic and grass-fed – directly from our happy sheep at the Edible Zoo
Mutton mince from our own organic sheep at the Edible Zoo, deglazed with red wine (with the alcohol having evaporated during the cooking process). It comes in a sublime tomato sauce seasoned with a fiery chilli, with onions, carrots and celery according to the season, all from our own gardens, and enhanced with a pinch of ginger, garlic, a dash of soy sauce and some homegrown herbs.
At our Edible Zoo, rare breeds are thriving, like the Carinthian Jezersko–Solčava, the Krainer Bovec sheep, the Jacob sheep, the Wallachia sheep and the Racka (from the Arche Austria programme for the protection of rare livestock breeds). Our animals live happily outside and are grass-fed. You can see for yourself how they’re doing when you visit us at the Edible Zoo.
