A Raw Ham, cured, cold-smoked and then air-dried in the traditional Styrian fashion. The ham develops its mature flavour through a natural and slow air-drying process.
This Schinkenspeck shows a moisture loss of around 30% of its original weight. Aged for at least 6 months.
At our Edible Zoo, we raise Schwäbisch-Hällische Pigs as well as Mangalitza or Woolly Pigs and Turopolje Pigs (both part of the Arche Austria programme for the preservation of rare native breeds).
