Beef shank from our shaggy Highland Cattle which only lives outside and mostly eats grass in the summer and hay in the winter with an occasional top-up of groats - a hull mixture of wheat, barley, corn and cocoa. To this we add onions, beef stock, paprika and select spices. Made according to an old "Vienna Saft-Goulash" tradition.
