Creamy liver pâté that can do entirely without emulsifiers, from animals that live healthily here in our zoo. We process the livers from our highland cattle, pigs and sheep in various combinations. This fine cream gets its haute cuisine touch from the combination of glazed Styrian apple bits and a dash of bourbon vanilla, with that a bit of onion and uniodised sea salt.
At our zoo, we have rare breeds from the Arche Austria programme for the conservation of rare livestock breeds such as Kärntner Brillenschafe (Jezersko–Solcava sheep), Krainer Steinschafe (Bovec sheep), Jacob sheep, Racka sheep, woolly pigs, Turopolje pigs and Swabian-Hall swines. And on our pastures grazes shaggy Scottish highland cattle. Of course all our animals grow up without prophylactic antibiotic treatment. They are resilient, perfectly adapted to free-range husbandry and we treat them with medicinal herbs from our own zoo pharmacy.
