Free range pork leg – a ham that’s cured in a herb-infused broth and then gently cooked. A typically Styrian specialty, to be enjoyed cold or hot, maybe with a delicious side of pumpkin.
Ham weight reduction through curing, smoking and cooking around 20% of original weight.
Note: the proportion of bacon fat varies by product, because each pig carries an individual amount of bacon fat. Our animals live outside all year round and get plenty of exercise, so their fat is very precious and too good for cutting away. Instead, it can be used for cooking.
