Our salami has a moisture evaporation rate of about 40% of its original weight.
At the Edible Zoo, we keep our Wagyu, Angus and Murbodner cattle outside all year round so they get plenty of exercise. Our pastured pigs are also raised in an animal-friendly manner – they are able to wallow in the forest mud and can enjoy roaming our beautiful grounds all year round. We have Mangalitza pigs, Swabian-Hall swines as well as Duroc pigs, and you can visit them all at our Edible Zoo.
