This is pork neck seasoned, smoked and dried in the traditonal Styrian fashion. It is processed gently and slowly with a focus on regional flavours.
This bacon shows a moisture loss of around 40% of its original weight. Aged for at least 6 months.
Note: the proportion of bacon fat varies by product, because each pig carries an individual amount of bacon fat. Our animals live outside all year round and get plenty of exercise, so their fat is very precious and too good for cutting away. Instead, it can be used for cooking.
At our Edible Zoo, we raise Schwäbisch-Hällische Pigs as well as Mangalitza or Woolly Pigs and Turopolje Pigs (both part of the Arche Austria programme for the preservation of rare native breeds).
