At the bottom, a soft, tender-melting and chocolatey mousse made from a high-percentage dark chocolate with an 80% cacao content, whisked into butter until foamy and exploding with chocolate flavours. At the top, a thinner dark chocolate ganache made from chocolate, milk and a pinch of salt. It’s all coated in a classic dark chocolate with 70% cacao power.
