The back bacon from the Mangalitza or Woolly Pig is a particular delicacy. We only enhance it a little bit with sea salt and rosemary and then keep it in a cold environment until it’s white and firm.
In our Edible Zoo, the shaggy Mangalitza Pigs live outside in a small grove all year round. Even though their meat has always been popular, Mangalitzas almost disappeared completely at one point because they cannot be raised in pens only. Now, through extensive breeding in small sounders, the breed is slowly recovering.
