"Moastabratl", describing the most exquisite cut of pork, is a term typical for the southern Austrian region of Styria. The cut used to be reserved for the master butcher, back when home slaughters were still the norm. It’s a lean rack of pastured pork, gently cured, smoked and air-dried.
This bacon shows a moisture loss of a minimum of 40% during the drying process. Maturing time is around 3 months.
We call the pigs at our Edible Zoo “Pasture Pigs”, because they are reared in an ideal outdoor environment and are able to take mud baths all year round. We raise Mangalitza pigs, Duroc pigs, as well as Swabian-Hall swines. You can visit all of them at our Edible Zoo.
