Hofbauer’s smoked carp caviar doesn’t pop like traditional caviar, but is rich in umami and salty notes, combined with white chocolate. It is served with a fruity red jelly made from strawberries, blackberries, blueberries and raspberries, and a layer of almond praline with caramelised Waldviertel blue poppy seeds.
