Batka, the radio 88,6 DJ, originally had the hilarious idea for a schnitzel chocolate. While this wasn’t feasible per se, the idea was just too good not to use. We took the ingredients for a garden-variety schnitzel, like pork, bread crumbs, egg, cranberry jam, fries and rice, and created a crispy bonbon schnitzel menu.
Roasted pork cracklings and caramelised butter breadcrumbs in almond paste with a dash of lemon as a filling, in a shell made of cranberry couverture with decorative white chocolate and green cocoa butter sprinkles. The fries are salted potato crisps covered in milk chocolate, and next to them, a white chocolate egg made from a rice couverture, all sitting on a caramel bar filled with almond and hazelnut praline, and seasoned with a hefty dose of humour.
