A raw Ham, cured, cold-smoked and then air-dried in the traditional Styrian fashion. The ham develops its mature flavour through a natural and slow air-drying process.
This Schinkenspeck shows a moisture loss of around 30% of its original weight. Aged for at least 6 months.
We call the pigs at our Edible Zoo “Pasture Pigs”, because they are reared in an ideal outdoor environment and are able to take mud baths all year round. We raise Mangalitza pigs, Duroc pigs, as well as Swabian-Hall swines. You can visit all of them at our Edible Zoo.
