This is pork neck seasoned, smoked and dried in the traditonal Styrian fashion. It is processed gently and slowly with a focus on regional flavours.
This bacon shows a moisture loss of around 35% of its original weight. Aged for at least 6 months.
Note: the proportion of bacon fat varies by product, because each pig carries an individual amount of bacon fat. Our animals live outside all year round and get plenty of exercise, so their fat is very precious and too good for cutting away. Instead, it can be used for cooking.
We call the pigs at our Edible Zoo “Pasture Pigs”, because they are reared in an ideal outdoor environment and are able to take mud baths all year round. We raise Mangalitza pigs, Duroc pigs, as well as Swabian-Hall swines. You can visit all of them at our Edible Zoo.
