Inspired by the Reindling, a type of yeast-based Bundt cake popular in the southern provinces of Austria, Josef Zotter has created a blend of two ganaches, one a cinnamon and hazelnut nougat ganache, the other made from rum-soaked raisins. This comes covered in milk chocolate with 50% cocoa solids and scattered with raw cane sugar crystals.
