Our grass-fed beef, derived 100% from our own organic cattle at the Edible Zoo, browned and then deglazed with red wine, which evaporates during the cooking process, doused with beef jus and added to a fine tomato sauce enhanced with parsnips, mushrooms and homemade spicy bacon. Seasoned with elder blossom syrup and a bit of dark chocolate.
At our Edible Zoo, we have a variety of cows like Wagyu, Angus, Murbodner and Highland cattle. Our animals are thriving happily outside and are grass-fed. You can see for yourself how they’re doing when you visit us at the Edible Zoo.
